How To Make A Dublin Coddle

Ingredients:

  • 1 pack (8 oz) of Jolly Posh back bacon
  • 1 Jolly Posh Cumberland Coil sausage
  • A splash of oil for frying
  • 2 lbs golden potatoes
  • 1 large onion
  • 3 large carrots
  • 2 tablespoons chopped fresh parsley
  • 3 cups chicken stock
  • A little butter for extra flavour

Method:

Step One: Brown the Meat

Chop the bacon and sausage into large, hearty pieces. Heat a splash of oil in a frying pan and brown the meat for about 10 minutes. Set aside.

Step Two: Prepare Vegetables

Slice the carrots into bite-sized chunks, the onion into thin slices, and the potatoes into rounds.

Step Three: Prepare the Dish

In a large, ovenproof dish with a lid, start layering the ingredients. Begin with a layer of the browned meat, followed by the vegetables, then the potatoes, and finish with a sprinkle of parsley. Repeat the layers until everything is used up.

Step Four: Add Chicken Stock

Pour the chicken stock over the top, making sure everything is covered.

Step Five: Cook the Dish

Cover the dish with the lid and place it in a preheated oven at 350°F (175°C). Let it cook for 2 hours. For the last 30 minutes, remove the lid to let the top layer of potatoes crisp up slightly.

Step Six: Serve & Enjoy

Once it’s done, ladle generous portions into bowls and enjoy this hearty, traditional Irish meal with a side of crusty bread (optional, but highly recommended!).
