How To Make Sausage Rolls

Ingredients:

  • 1 pack Jolly Posh Back Bacon (6-7 rashers)
  • 4 Garlic cloves, crushed
  • 2 lb Potatoes, peeled and cubed
  • 1 cup Chicken stock
  • 2 cups water
  • 1 ¼ cups sour cream
  • ¼ cup Fresh parsley, chopped
  • Serve with Jolly Posh Breads

Method:

Step One: Cook the bacon

Slice the bacon and fry in a pan with the garlic on a medium heat (4-5 minutes). Set aside two tablespoons of the cooked bacon to use as a garnish.

Step Two: Add the potato

Add the potato and fry for one minute. Then pour in the chicken stock and water, and bring to boil, then reduce the heat and simmer covered until the potato is tender.

Step Three: Pour in Cream

Turn down the heat, add the sour cream and stir, continue to simmer for 2 minutes, then add the parsley and remove from the heat. Cool for five minutes before blending.

Step Four: Blend 

Use a hand blender to partially blend the soup, but don’t blend completely. Just aim to blend the largest potatoes. This is a hearty soup and is designed to be full of tasty pieces of potato and bacon.

Step Five: Serve

Pour into bowls and add some of the set-aside bacon and parsley as a garnish. Serve with a rustic wholemeal loaf or some traditional Irish Soda Bread.
