I like the coil - because, tightly coiled, I cook it on my stovepot grill pan (ridged). My husband and I cut it to size for breakfast with eggs, then next night have it with mash and an onion tomato Bisto gravy !
Fabulous. Going to serve coiled around a Cajun spiced mustard night before thanksgiving with gochujang (gachagaru pepper flakes, rice vinegar, maple syrup and butter cooked quickly in a hot cast iron) sauce also on the side.
Nearly as good as I remember from the 1950's when we had a butcher from that region taking over the shop, have to admit my taste buds are not up to those of yesteryear
