What is a pub burger?

A pub burger is a type of hearty, flavourful hamburger typically served in traditional British pubs and modern gastropubs. Unlike fast-food counterparts, pub burgers are characterised by their high-quality ingredients, substantial size, and artisanal preparation. They are ideally eaten outside in a sunny pub garden on a bank holiday weekend, but more often than not enjoyed inside out of the rain! 

British pubs take real pride in their signature burgers, which have evolved from simple fare to sophisticated dishes that showcase local ingredients and culinary creativity while maintaining the comforting, satisfying nature expected from pub grub. These burgers feature thick, premium beef patties for juiciness and flavour, fluffy buns, and a variety of accompaniments that showcase local flavours and tastes. Classic accompaniments include mature cheddar cheese, British style back bacon, caramelised onions, lettuce, tomato, and pickles. More creative variations include blue cheese, traditional black pudding (blood sausage), or other gourmet ingredients.

Our recipe uses British cheese and diced rashers of our delicious British back bacon. Ideal if you’re having an American style cookout during “grilling season” and also impresses everyone at a tailgate.

Step One: Grill Your Meats

Pre-heat your outdoor gas grill to a high heat. Season beef patties with salt and pepper and place them on the grill. 

Place back bacon rashers on the grill next to the burger patties, allow the bacon to cook for a few minutes before turning and cooking the other side. Remember: back bacon cooks quickly on a grill and does not crisp! When cooked, remove the back bacon and dice into small pieces.

Step Two: Turn and Add the Cheese

Now turn the burger patties. Once turned, put a portion of cheddar and blue cheese onto each patty respectively and allow to melt. Cook your beef patty to your desired level of doneness.

Step Three: Build Your Burger

Place the bottom bun on a plate, followed by a leaf of romaine lettuce. Add the beef patty topped with melted cheeses, then add cooked bacon morsels, sliced onion, and tomato, then the top of the bun.
