How To Make Black Pudding Pakora

Ingredients:

  • 1 tube of Black Pudding 
  • 4 teaspoons of Butter
  • 1 cup of Onion, finely chopped 
  • 2 cups of Mushrooms, finely chopped 
  • 1 tablespoon of Fresh Parsley, finely chopped 
  • 1 tablespoon of Fresh Coriander, finely chopped

For the Pakora Batter: 

  • 1 ½ cups of Chickpea Flour 
  • 1 teaspoon of Chilli Powder
  • 1 teaspoon of Salt
  • 1 ½ cups of Natural Yoghurt 
  • 1 Lemon, juiced

Method:

  1. Mix the Batter Ingredients
    To start, combine all of your dry ingredients in a large bowl and mix well. Add the natural yoghurt and lemon and set this aside for later.
  2. Sauté the Vegetables
    In a heavy-based saucepan, melt the butter over a low heat. Add the flavorful onions and cook for 8-10 minutes until soft. Increase the heat, add your mushrooms and cook for an extra 5 minutes. This step enhances the flavor, creating a perfect base for the rich black pudding.
  3. Combine the Black Pudding
    Fold in the black pudding with herbs and mix well. Allow the mixture to cool slightly before shaping it into balls.
  4. Coat the Black Pudding Mixture
    Roll the cooled black pudding mixture into balls and dip them in the pakora batter. The batter will provide the crispy, golden pakora texture, creating a perfect blend for your black pudding pakora.
  5. Fry Until Golden
    Heat oil in a pan and fry the coated black pudding balls until golden brown. This should only take a few minutes on each side to achieve that crispy, delicious texture.
