Black Pudding Pakora

A combination of two delicious things we find delicious - black pudding, and Indian food!

Serves 6

  • 1 tube, Black Pudding
  • 4 tsp Butter
  • 1 cup Onion, finely chopped
  • 2 cups Mushrooms, finely chopped
  • 1 tbsp Fresh parsley, finely chopped
  • 1 tbsp Fresh coriander, finely chopped

For the Pakora batter:

  • 1 ½ cups Chick pea flour
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 1 ½ cups Natural yoghurt
  • 1 Lemon, juice

Mix all the batter ingredients together.

Then melt the butter in a heavy-based saucepan on a low heat and add the onions. Allow them to cook gently for 8-10 minutes. Increase the heat and add the mushrooms and cook for 5 minutes. Now fold in the black pudding and the herbs and leave to cool.

Roll the black pudding mixture into balls and dip into the pakora batter.
Cook in hot oil until crisp and golden. Serve with yoghurt or tomato sauce.
